JB is local chef, Joyce Boston. The Rolling Bistro is a dream that’s long been in the making – a way for her to bring good Southern food (with a twist) to everyone! 

After years of working in restaurants and country clubs around Hickory, Joyce made her dream a reality. The food truck is the chance for her to make the food she loves best and bring her famous lobster mac and cheese and pickled fried chicken to businesses, festivals, and friends.
